“I’m really proud to say that I got my first taco in my entire life,” says Baja Fresh founder Mike Nolte.
“It was an experience I will never forget.”

Noltes father is a chef in the Philippines.
And, his wife is a taco expert.
“We’re just so happy to have our first taco ever,” Nolttes son, Ben, says.
“But the truth is, we’ve been making baja-style tacos for years, and it’s been really fun to get to do that for the first time.”
Baja Fresh, a taco shop and restaurant in Mexico City that’s been in business for over 50 years, is famous for its Baja-inspired food.
Baja Foods, a company that specializes in Baja tacos, has been in the restaurant business for more than 100 years.
But in the last decade, the Baja Food Truck series has become the fastest growing in the world, and BajaFresh is one of the top spots to find a baja taco.
“The first time I ate baja, I was a little scared,” Nollte says.
Bajas cuisine was always a bit exotic, Nolltes mother says.
And her family, which includes his brother and sister-in-law, always had reservations.
But she says the food has grown to the point where she now gets a little nervous.
So what does Nolting’s wife, Kim, think of her first Baja taco?
“I loved it, too,” Nols wife says.
But what else can you expect from the husband and wife team?
“We don’t want to get too far ahead of ourselves,” Noli says.
He says he’s trying to keep his baja food a secret until the day he dies.
In fact, Noli’s brother, who works for BajaFood, says he thinks that the restaurant may have oversold the baja truck concept.
“I think the concept is too far off the radar, to say the least,” he says.
That’s partly because there’s not enough interest in baja trucks in the U.S., which means BajaFried will likely continue to struggle.
Nolting says he hopes that the bajas food truck concept will be a success in the future.
“There is something to be said for the concept, and I hope the concept continues,” he said.
As for Nolters son Ben, Nols is excited about his father’s plans to open his own restaurant.
“If I get this thing off the ground, I will be doing it right,” he promises.
